Thank you Razor & Revolver for these encouraging comments. You're right it has a different flavor. Much better than those I buy from the store. I think breed & freshness has something to do with it. If you get a chance try the project and see for yourself. DM
 
Yes,even the fat is a nice yellow natural color,over here store bought chicken has pure white fat ..not good.same as home raised pork and beef,totally different looking and tasting.
 
Razor, I think you've done this project before. Yes, the fat is yellow. During processing I peel it off from around the vent and gizzard. Leaving the rest. Just quickly while working, nothing OCD. It's not like I get it all. The dogs like these tid-bits. During grilling it helps keep the meat moist and I think (like you say) this adds to the flavor. You can't get much more healthy eating than skinless grilled chicken breast. Guests who come eat with us comment that, 'this chicken is so good. When we grill chicken it doesn't
taste like this.' This with a green tossed salad, SW ranch style beans and homemade bread makes for a simple Summer time meal. That doesn't heat up the kitchen. Use your Buck Kitchen set to carve and slice the bread. Bon-apetite, DM
