Frustration and dismay

IMHO the "test" itself does not matter...what matters is what the various knives do in the SAME test...

It's not the same test unless it is repeatable within a very high degree of accuracy. The forces and angles of trajectory must be exactly the same for the tests to be the same. There is no way that this is the case with Noss' tests, so in my opinion they are nothing more than entertainment and are virtually worthless as tests.
 
However... I have NEVER had any knife do what this one did on the cutting board....


So you have never had a wire edge. Good. Your sharpening skills are better than mine. I HAVE had a wire edge before and it behaved just as the OPs did.
 
Heavy reprofiling will create a heavy wire edge and S30v is more prone to this than other steels. Remove some of the fatigued metal paying attention that it does not burr too badly this time and you should be good.

Your best friend is a 10X magnification Loop as used by jewelers. This will clearly show the edge burr under strong light, I use a desk lamp with 75w bulb.
