I've got a Brand Never Used Fillet Knife Set that would make a great Christmas gift. It's the Outdoor Series Set made by United Cutlery.
Here's what the set includes:
Blade material: 420 J2 Stainless Steel.
Handle Material: Triple-riveted, impact-resistant Bakelite.
Full tang construction.
