great video but there is one crucial difference between japan and here....all you guys make your knives from start to finish for the most part....some send them out for ht but that is understandable....in japan when they make sushi knives one person forges it...it gets sent to someone who grinds it.....someone else will put on the handle etc etc.....i would much rather have one person's hand on my knife so i knew it was being treated right.....ryan
