Fun knives to play with?

Anything with a flipper.

Two of the ones I enjoyed are the Kershaw Volt and the Hinderer XM-18.

I guess it depends on what you mean by "play".

I find it very relaxing to fondle some of my slip-joint traditional knives, as they are very smooth and have a great feel in the hand.

I love to open and close my Acies, as it is so smooth and again, the texture of the titanium scales just feels good in hand.

For chopping stuff, I love to play with my JK/Pitdog Knatchet.

Probably the most plain-old FUN I have with knives is from throwing a (relatively) cheap set of throwing knives into an old stump face. Throwing and hitting a target, and in my case even just getting the knives to stick, is a lot of fun to me.

Whittling and carving is also fun, and I like to use my Izula for those tasks.

Michael Walker designed a lock that mounts a rocker on the blade with a thumb stud for right handers. CRKT used this design on 2 models. The blade locks in the open position and also the closed.
 
Camillus made a CUDA variation that had a sliding button to activate the blade. Many blade styles were offered. It is theraputic to play with.
