I have a couple of waterjet cut Coarse Texture Peel Ply G10 handles. I did not remove the thin layer cover during the process to protect it from getting scratched.

It is quite hard to remove by hand. I even used a box cutter, but it is bonded very well on the surface. Is there a better and easier way of peeling it off ? Any help is greatly appreciated...

I did some searching earlier in an attempt to help, but, from what I can tell, it should be peeled while you have access to the frayed edges. Other than that, the razor is the other method.

It doesn't look like you've been able to get a corner lifted, but when you do, try needle nose pliers to pull the top off.

None of that is probably helpful at all. Someone will be along to help though, I'm sure.

Perhaps a bit of steam if the heat gun doesn't do it on its own. I've had to peel some stubborn adhesives that way, can be hit or miss! Found that trick when I had to peel tint on a back window with a defroster, can't razor them off.
