I wouldn't worry too much about the size of the hook but more about the length of the handle and tiring the fish out all the way. I never gafted a fish that wasn't tired out b/c the chances are he'll get away mortally wounded. There is a small handgaft about 6 inches long that I carry on the belt and a longer 4 1/2 foot one in the boat. Redfish and black drum are hard to sink the gaft b/c the tip needs to puncture a the scales. Those big scales distribute the hit over a larger area. Jack crevalle, catfish and big flounders are not a problem. Just hit 'em hard and pull them straight. Also learned the hard way that the easiest way to get a big aligator gar out of the water is to crack the skull with a lead pipe and then hook 'em under the chin.
