You’ve got 2 labeled #7, for the case #7 do you know what kind of steel it is?
Yeah, I know, but it's not worth changing and messing things up more than they already are.

According to the excellent Knife Steel Composition Chart app, older Case knives use a slightly modified 1095 steel made by Crucible. It differs from 1095 by adding a bit of chromium and vanadium (hence, the CV you see in newer Case knives) to help with grain refinement. Hardness around 55Rc, and definitely not stainless.
 
Everything that has been sold has been shipped Friday afternoon. They should all arrive Monday, tuesday at the latest.
