On the note for whittling and carving the 88 has a lambsfoot good for roughing) and California/Turkish clip (good for detail work). I use my 88 for whittling all the time. The 88 is a gem and super comfortable in the hand due to the curve of the handle. I am an experienced whittler/carver 1095 is great with cottonwood bark and basswood the two most popular woods for carving/whittling.

The centering is pretty good. I would say the main blade is pretty well centered and the lambsfoot just slightly favors the center. On the carving/whittling question, I can't really say, as I haven't used the knife for that purpose, but I can't see why you couldn't.
