Nice knives, Steve and Joss. Not sure if I prefer the polished blades or not, but I do like mostly "bark" on a handle myself. Sometimes the material underneath is spectacular as well and in that case I like to get just a glimpse peeking out from under the bark. I'm sure some makers grind it away on purpose but I tend to think of being able to use most of the natural surface as a mastery of working the material.
