I agree that the Kershaw Double Cross would fit your requirements. It has wood handles. It also has the look of an old fashioned pocket knife, but the thumb studs and liner lock make for a great one handed knife.
You might also try an Al Mar Hawk or Osprey. They come with wood handles and appear to be nice gentleman's knives. I've never held or seen one in person, but I've admired them while searching online.
