A great start is the sticky at the top of the page, I believe it even includes a list of books.
You didn't say if you wanted to forge or do stock removal. Even if you forge there's stock removal involved (unless you're Tai Goo

I'd recommend Goddard's $50 Knife Workshop or whatever it's called, it's full of great information and has plans and stuff for some equipment.
