Going Mid Tech after the first of the year. Where is a good place to start?

Advice from the pro's and everybody welcome

Not a pro, just an observer.

Personally I would start thinking mid tech when the demand for my knives at a certain price point was vastly outstripping my ability to supply that demand. I dont have any idea what position you are in with your knives, so I cannot provide any direct information. Personally without that demand already built up and established I would be very hesitant to make the capital expenditures necessary in mid tech knives hoping to find that demand after the product was made.

That being said if we are talking fixed blades, I would think that having the blade blanks, handles and guards waterjet cut to profile as well as having all the holes spotted for drilling would be a good use of mid tech. Also large batch heat treating from a pro heat treater would be helpful. Finally some of the mid tech kitchen knife makers are having their bevels ground the their spec by Lamson (sp), a knife making company.
