Freshly roasted quality beans ideal within two weeks of roasting but some beans taste fine to me after a month. Proper brewing temperature I would guess somewhere between 198 deg F and 203 deg F (hot but not too hot.)
I have to say the above is in vain without a proper grinder. I would not waste money on top quality beans, go through any pains to properly brew (which can be done well in a variety of ways from dirt cheap crude to expensive espresso machines) if I can't produce decent quality coffee grinds.
Yes I am saying a good grinding device that produces a uniform even grind is the foundation and secrete to good tasting coffee even stale coffee beans will taste better when properly ground (albeit somewhat weak.) For espresso it's an absolute must.
If you use a device that spits out rocky road you will not get good results let alone ever have any control of your final brew.
