Good european knife brands?

Ditto on Lionsteel, Viper, and Fox. All are excellent. Check out MKM (Maniago Knife Makers) too, also Italian.
 
Nice to see your haul and this is a useful thread for those wanting to know more about European knives be they Traditional or Modern types.

Just a point of correction for others reading this. Laguiole is NOT a brand of knife like Opinel, Douk-Douk (another good suggestion) SAK etc but a pattern of knife made in France (nowhere else....) and originating in Thiers the French knife capital. They come in many sizes from 8-13cm + many scales and many prices. For a decently made but not expensive Lag I'd suggest looking at G.David a factory producer.

Actually, Laguiole is the name of the small village where the knife comes from. Such a small place never thought about registering their brand, and now every company can boast that they are making Laguiole knives (including Thiers knife makers).
 
Talking about french brands, I would like to highlight the Perceval knives, particularly the "le Français" model.
It's a liner lock knife built like a food table knife. The fit and finish of the knife is perfect in every aspect, the lock is solid and the edge slices throught meat or fruits like in butter. They have all kind of fancy scales like ironwood, juniper or turtleshell (mine is ebony from Gabon). Steel is tried and true 19C27.

We have an Italian Factory Service rep that comes to my workplace from time to time. I asked him about what kind of knives were popular over there, mentioned some of their brands like Lionsteel, Fox, Maserin, etc. He had never heard of any of them. He told me most of the knives he had seen were made in China, so I expect Europe is alot like it is here in most places. Hopefully you can find some nice shops with a good selection of locally made knives while there.
 
Mister_Punchy Mister_Punchy Well, of course yes you are pedantically accurate...it derives its name from the village in Ayeron, where I'm sure local cutlers in the early c19th (Napoleonic wars) had neither the thought nor the option to patent or trademark their knife :rolleyes: Early Lags look completely different from the contemporary take. Thus it spread to the Thiers district where cutlers congregated en masse. My point is, it's a pattern style not a brand- the most renowned French local knife- nor is it something made in Asia under various faux guises. There's even debate about how to pronounce the name in France.
