Like many others, my first knife was a SAK. I think a locking blade is a good idea. Now that Victorinox has locking blades on some of the smaller folders, maybe that's what you want to look at.

Having things like a screwdriver and reamer on there also make it less likely that she'll use the knife for something it's not meant for, too.

Edit: maybe this model (model S111) is better, it replaces the corkscrew with a philips bit. I'm guessing 8 year olds aren't big wine drinkers.
