Good first slippy?

Just give it a little TLC and you'll be fine.

Oil the joints when you get it and keep a light coat of mineral oil (or oil of choice) on the blades from time to time and you'll be fine.

I prefer carbon steel for my slipjoints, generally speaking, though I have several fine examples in stainless as well.
 
Maybe a trapper pattern would provide the blade length you seek? Or a Grand Daddy Barlow? Case has a pattern called the "Moose," an oversized muskrat with two different blades.

Also take a look at folding hunters and swing guards. Much larger than a traditional "pocketknife", but you'll get the desired length, and the bulk will be a closer match to the 'tactical' folders you're accustomed to. Big drawback for your criteria, many/most only have one blade.

I'll echo those who mentioned a Case Large Stockman. I like a 6375CV which is carbon steel with jigged amber bone scales. - -

I prefer a Boker 4" stockman as it has thinner blades than the Buck.
It is a flat grind.
It is also is about $33.

You also can find a 4" Camillus stockman on eby for about $15, which is an excellent start.
 
I like the tortoise celluloid. Out of all the plastic scale colors I think this one looks the best even after its been "beat up" or pocket worn a bit. Just my .02 :)
 
Here's another one I can recommend. You can find them on Ebay from time to time.

Sometimes they list it as a "Ground Hog" and sometime as a "Take Apart Knife". I usually recommend this knife to people who are into modern knives. It's sort of a hybrid, the pivots can be adjusted and can be taken apart. It's a small knife, I don't have it with me but it's about 3.25 - 3.50" closed. The liners and blades are SS.....

That's my whittlin knife. It's a little small, but has the best whittling blades I've found yet, on a folder. Good edge holding steel too, 440C I believe.

Great knife for around $30.
 
3318 CV Case Yellowhandle Medium Stockman...extremely functional, excellent everyday knife. I never leave home without it. While I may leave without my other knives, never this one.

To me, the Carbon Steel is the only way to go. Its a lot of fun to learn the tricks to carbon steel. With a year of taking good care with the patina, it will offer a wonderful old school knife that will become part of your life.
 
How bout a schrade USA 8ot. Pretty common, and you can still pick them up for around $30-$40 bucks and they are well worth it to me. unbreakable handles, carbon steel, And they are so darned traditional they dont even make them anymore, LOL. Good luck in whatever you choose and you'll get the best help you can anywhere asking these guys. But watch the schrades and make sure if ya get one its USA there are some guys on ebay trying to pull a fast one on unsuspecting buyers- Joel
 
Case Med. stockman, you can't go wrong. ALOT to choose from too, there's a flavor for everyone. My personal favorite is amber bone.
