...learning outdoor skills? I'm talking basic survival, tracking and identifying animal tracks, identifying plants (poisonous and edible), how to build shelter, etc... Basically a site or something on how to think/live like a mountain man/woman.

Does this mystical site exist? Find out next time when people reply! :)
 
Yep, Quiet Bear pretty much listed what I'd have listed for you. There are others, but you'll find them by visiting the listed sites.

I might suggest a book on animal tracks, take a camera with you into the bush and take photos of the ones you find and figure out what they belong to. While you're out and about in the bush, take that camera and stalk up on rabbits and squirrels for a closeup. That'll teach you how to be quiet, when to move and how to move. It's a frame of mind as well as knowledge and ability. You can't look like a tree unless you see yourself as a tree. Move like the animals instead of like a human. Think like you belong there instead of thinking like a tourist.
