Firebert, who makes the knives in those pictures?

The other info is definitely helpful and does make sense. Forschner knives seem to get pretty good reviews, will look into them more. Will play it by ear.
 
I made those knives. The cleaver is CPM 3V with amboyna and the paring knife is CPM 154 with Todd Combs "blue glow" micarta and desert ironwood.

I'd recommend that you handle the knife before you buy it. Good steel and blade shape are important, but the way it fits in hand is equally important. I don't like how most production knives have flat planes and sharp corners on the handles. Any pressure points will be an annoyance when you cut for a long time. A comfortable handle makes the blade an extension of your hand and cutting becomes effortless.
 
Thought that may be the case, good work! Being able to handle the knives, like anything else, before you buy is always nice, though I rarely have that option. Luckily, there is a place 30 minutes or so from where I am moving that has a ton of knives to checkout.
