Soes grain direction in any given stock have anything to do with the way the finished blade will sharpen? If so which is the favored grain direction?

You want the grain to run parallel to the edge. If you get steel cut from sheet, make sure that you don't get cross grain. This is why most makers prefer bar steel. Cross grain tends to warp on heat treat.

The grain direction of a steel has a lot to do with it's toughness. Its kinda like wood. Its almost imposible to make it break crossgrain, thats why when you see martial arts guys breaking boards they always do it with the grain. By having the grain parralell to the edge the same effect results.
