Grain size of various blade steels

I wish I did. That may be hard to come by in meaningful terms, since it is entirely dependent on the heat treating. Even the photomicrographs from the steel companies are misleading because they seldom use cryogenic quenching and that has a profound effect on grain size.

It would really be nice to see pix of the grain in just one steel heat treated by different people. I'll bet it would be very enlightening.

Cliff, do they have an electron microscope there at the university? I'd volunteer a sacrificial knife if you can get pix of a good sampling of a steel like ATS-34.
