Gransfors Bruk Wildlife hatchet. Used it to carve one spoon, decided it wasn't for me. This is a great example with dark, vertical grain.

Not gonna lie, I'm sad about letting this one go. Daniel Grantz made this one, and he's been at the company for over two decades so he knows a thing or two about making axes. With the dark straight grained handle, it doesn't get much better than this.
