GRAPHIC BK7&1264 Butchering Domestic Pig

I gotta say, the BK7 smoked through this task effortlessly. I had a slew of blades to choose from and started with the 7. Didn't feel the need to even grab anything else until I got ready to cut out the back straps. The Tanto tip on the 1264 worked awesome for that.

I arrived late, as usual. My buddy Crazy Dave had already killed and partially caped his pig. This was his first of which was born and raised on his land. I wish I had more pics, but it was just the 2 of us and our hands were pretty full and bloody.

I arrived and we finished gutting and caping it. I gotta say, for his first, he had done a great, clean job on the anus! I know that sounds funny but its important and can break a good butcher job.

Here it is caped and gutted...





The BK7 was plenty sharp and made short work of skinning. There's lots of fat to work through so it wasn't really difficult. It wouldn't pull off like deer so had to be cut the whole way.

For the straps I wanted to change it up so I grabbed one of my fav's...the 1264. It's super sharp, the angled tip was great for feeling the spine and ribs...

I wouldn't hesitate to grab the BK7 for any game work. I didn't get to split the belly for gutting but I'm confident it would have been up for the task...



The 1264 was a lot of fun to play with as well. It doesn't get out enough. I don't really feel like beating it up on a bunch of wood tasks and this was perfect for getting some time in.

He's doing 2 more soon so I may try a few others. Any requests? I'll be sure to have more pics with those!

Lots of meat, u gotta share some, jkd. i think you skipped the migthy bk5 , the perfect blade for that kind of tasks, just saying.
 
Fine use of a BK7, it's a good general purpose knife. It was the first Becker I ever bought.
 
Thanks JD! Nah, I stopped there and left the rest for Dave to deal with.

Yeah Kent...the 5 gets enough foody work shown here and I wouldn't say that it would have outshined either in this process.
For the rest of it? Probably so.

I have a video of taking the ribs but I've never posted a vid here. Tried to upload to photobucket. It uploaded but says there's some sort of delay before it hits my album so I'm just waiting for that.

Really, I got all wrapped up in it and forgot about pics until then. In fact, it was Dave's idea to take a vid of the ribs after I did the first set. I'll add some tomorrow of the ribs and loin at his Superbowl gathering.

One I never really intended on picking up any time soon. Snagged it in a trade and now it lives strapped to my EDC bag. This would have been my 12 but its taken apart and taped up waiting for the guard tab to get ground off.

My wife works with someone whose father raises a small amount of pigs. He sells 5 a year. We got to buy half of one last year. It was $400 but it all comes butchered and vacuum packaged with all the regular stuff like chops, ribs plus things like jalapeno bratwurst, breakfast sausage and sliced bacon. Best pork Ive ever had. The stuff from the store is plain and boring now. Ruined me. I'm hoping to get more from his this year.

So i'm drooling over here. :thumbup:

That Cam 7 is the one Becker that for some reason I'm able to get really super sharp.
We're total rookies and certain that a fair amount of fat and other good stuff will go to the dogs.

A bit of a rush job for Superbowl eatins'.
Next time we'll try to be more pro and have the skin and all on, but that's a major process. Well worth it in my opinion but long and tedious.

Plus our pro buds were doing other things so we rednecked it!
 
Nice job. That looks real good. My daughter was bit by a pig once so she always makes it a point to say how she loves to eat pig. That 7 looks like it is very sharp. Thanks for sharing.

I tell ya, the more I use it, the more I love it. Really saw not much use for it or reason to get one with the other options at my disposal. And all the comments about Jack of all trades and master of none etc., kept it on my "to get" but not "must have" list.

I'm sold on it..the balance is really nice. And for whatever reason I can keep it hair whittling sharp...its becoming my goto.
 
Im glad the 7 won you over. I picked one up not too long ago and I love it although at this point its more of a novelty. I say that as I have yet to really use it. Your thread will make me use it, thanks!

Now I have a hunger for some bacon...strange

Great Job NC and as others have stated ribs got me licking the chops enjoy the party bellies should be full
