Have you noticed if these 2011 productions are sharper than older ones? I have a GEC from 2008 and it came shockingly dull, like I could rub my finger on the edge and not get cut. Took an hour on the sharpmaker to get it how i like it.
I checked a few around the store as we still have some 08' models around. Most of the new knives I checked had shaving sharp blades in them but there were a few that didn't quite live up to that expectation. Overall I'd say sharpness has improved but its not 100% gauranteed.
As a side note, we will gladly inspect any knives for sharpness etc. before shipment. Just put a note in your comments during checkout.
