Great Eastern Cutlery, two beauties...

Edge-Pro Gary? Whatever happened to the bench stones? I would think that a man who could get a knife sharp enough to push cut through a book wouldn't need one of those fancy systems.

Yeah, I am a convert! I still have a couple of stones and the know how, but
for a consistent edge, I have to concede it does a more accurate job than
even I could do, and especially around the tips, a bit pricey but worth it, to me at least!

edited to add, bench stones traded to a friend, so he's trying his hand at sharpening now...

No don't let Gary give you the wrong impression. He was standing at the show sharpening on a pocket stone not long after I arrived around 1pm. Yes I was late to the show that opened at 9am.

Thank you for allowing me the honor of personally inspecting your knives! Beautiful choices and pictures. Well done as usual. :)

You're most welcome ! and thanks for showing the ones you brought as well, pretty cool stuff.

Using the edge pro on small blades can be tricky, so I cut up a tongue depressor to fit
across the table and once positioned, I'll then also tape it down.
The wood is a little thinner than the back stop, so now the stones won't hit before reaching the blade.

Provides a very cleanly made bevel, mirror polished, cuts very nicely :)
Here's a close up of the coping blade on the Congress knife, you can see
the reflection in the bevel area ;)
