Pardon my ignorance, but does reference to an angle degree refer to one side of the blade or the sum of both, i.e., 10 degree bevel mean 10 degrees per side?

This is exactly correct. You must specify whether or not its inclusive, but if its not specified as inclusive then it generally means per side. Ie: 23 degree angle would be 23d each side, with an inclusive angle of 46 degrees.I see people talk about it both ways so you have to be careful to figure out what they mean. Normal knives are sharpened at 30 to 40 or more degrees inclusive. Some people pay with much smaller angles, so you might find someone that says 20 degrees and means 20 degrees inclusive, not 20 degrees per side. If you are saying it yourself, it is better to always say "__ degrees per side" or "__ degrees inclusive".
