Grit Finish of Precision Ground Stock

Years ago, I did a chef's knife using 100 w/d wrapped around a Sharpmaker rod. I liked that finish and it was quite reflective for so coarse. 400 is really nice. I'd like to try and go as high as I have the patience for, maybe 2000 or so.

I realize I'm all over the place on this. These are my first knives from scratch in a couple years. Looking back, there was always something I didn't like, and I want to avoid that this time. I don't have the energy to take any more knives apart and do them again, and again.

I hear you! The energy is much better spent in getting the basic grind and beginning finishing steps the way you want in the first place.
