Great suggestions so far! I'd also recommend perusing the Buck Custom Shop and look for a few 500 series folders that fit into your budget. You might be able to get each groomsman a different scale but on the same platform.

You could go for a Canal Street single blade trapper (14-4CrMo blades, which is a high end stainless) or small lockback pinch (D2 blades). Both have decent sized stainless bolsters that can be engraved with initials, dates, etc. right at the factory. They've done a good number of wedding "packages" in the past. You'd have to contact them for the specs though.

I gave non-traditional knives to my groomsmen so won't go there. They were easily engraved though.

Have you considered something along the lines of a Case Eisenhower or Mini Copperlock. I love the Eisenhowers as they are small and easily pocketed. Not too much knife for the non-knifer and big enough to open the mail with. May be hard to find what you want as they are in the vault right now so you will have to look on the secondary market. I like the looks of the white synthetic handles. I don't know if Case can engrave or etch outside of full production runs so you would have to give them a call.
 
I can't believe nobody has mentioned the GEC #15 Boy's Knife. The single blade version is slim and hides in a pocket until you need it. Case Swayback Gent or Canal Street Half Moon Trapper are the same.

Victorinox Alox Cadet, engraved, is a great knife for non-knife people.
 
I gave red SAKs with engraved initials on the scales to my groomsmen. Red was one of the wedding colors so it seemed appropriate. I think a GEC #15 or case sway back jack/gent would also be nice.
 
For "non-knife" people, I think the Cadet is perfect. As others have mentioned, you can have it engraved. It's stainless, so you don't have to worry about them rusting up. Less obvious, but definitely important is the screwdriver blades. Handy, of course, but the other advantage of them is that these "non-knife" people won't be tempted to using their knife blade as a screwdriver. Certainly you've read the numerous "Stupid Things People Have Done With Your Knife" threads, and you know what "non-knife" people do with them. Give a "non-knife" person a knife and they're likely to snap the tip off using it to screw or pry. But give them a knife with screwdrivers, and they'll spare the blade.

Since the Cadet isn't terribly expensive, buy a few extras and cherry-pick the best ones. Although Victorninox's QC is excellent, it's not unheard of to get a NIB one with a wobbly blade or a ding in the handles.
 
Just tossing in an idea that I didn't see offhand, the Case executive lockback. Small knife, well known company, classy, plenty of room to engrave.
