Okay.. I bought a 110vac VFD, it outputs 3 phase.... can I run a single phase 110vac motor off of it? If I can't then what are my options in 110vac 3 phase or can I run it somehow to a 220vac?

NO

If you use a VFD, you need a 3 phase motor



The whole point of using a VFD is to output 3 phase power

The VFD's we commonly use output
3 phase
220VAC
So you need a motor that matches that.

Your options with the 110v single phase motor are to sell it, or put it on another grinder.
