This blade was a commission from a forum member that saw the original Santoku Hunter (probably better called a camp Santoku) I posted for sale. This knife is a lot closer to kitchen oriented. His request was a knife slightly stronger than an average kitchen knife that he could use on trips. He requested a 5.5"-6" cutting edge, but this one came in a bit under during grinding. I was still waiting on the wood for his handle to come back from stabilizing, so I told him I'd remake the blade and just finish out this one to sell here.
Basically intention was classy + strong, but still practical. I didn't want to interrupt the wood with a handle pin, so this one has an extra long tang, thinned to balance nicely at the bolster. It's still a thin slicer grind so wont take any extreme hard use, but this knife is still definitely built to be used.
5.5" at guard, 10.5" OAL, final thickness .143". S35VN from Aldo, HT @61RC w/Cryo by Jeff at Tru-Grit. 416SS hardware. Wood stabilized by K&G, buffed to semi-gloss and sealed with finishing wax.
It has a medium-thin hollow grind, with a slightly convex bevel stropped to shaving sharp. Should be a great slicer, and I think it would work quite well in the kitchen, as well as the original customer's needs, but the handle may require a bit of care.
I got a really nice deal on the wood, so I'm able to offer this one for a bit less than I'd normally price at. $190 shipped SOLD.
