Guess that timber!

And the timber is..................................Rose Alder. Also known as Brown Alder or Soft Corkwood because of it's bark (or so wikipedia tells me). We use this stuff as work for a substrate. It's usually very plain but works and paints well because of it's tight, fine grain and very stable. It's also nice and light. We've also used it a couple of times as a substitute for mahogany and maple in dark stained furiture. A very versatile wood really, but i've never seen figure like this in it before. It might be a bit soft for knife handles. It's softness is comparable to pine. So it's not TOO bad.
 
sounds a lot like poplar here in the states.
easy to work with, fairly tight an even grain, generally not a lot of figure to distract from the rest of the piece of furniture, takes stain well, and cheap.
