Gyuto Project - Critique and questions

I do all my grinding post ht on thin kitchen knives and haven't had any problems yet. I plate quench and only use stainless though. They look good. I've been wanting to try a hidden tang with a wa handle. Keep your progress posted.

Will do Matt. I've only done very minor grinding post HT. I'm a little worried I will burn the treated blade doing a full grind. Have you ever tried just taking off like 80% and leaving the edge this pre-HT? Seems reasonable. They warp that badly?
 
You guys have me so concerned about this, I am thinking about doing this.... ?

Just a little update on these. I got the four I sent out back today. They all have some slight warp or bend in them, but no bacon edge and I think nothing that can't be straightened out.
Some so slight I think I could almost just correct it with grinding what's left down straight.
I have 4 more to send out, and will see how these go over the next couple of days before I do that.
 
I finished up the first one in this batch, and after grinding to final after HT it is very straight indeed.
Finished in Desert Ironwood and African blackwood (I think that's what it is).
Hand sanded to 1000 with oil.

Blade 9.5 by just under 2 at the heel. Flat ground to .009.
Spine @ .105 tapering to .06 2 inches from tip.
Spine and choil slightly rounded for comfort.

Any thoughts on the handle to blade angle on this? I put a bit of rock in the blade belly, and angled the handle away slightly.

Nice looking knife. To really make a good evaluation, I'd have to cut with it... Why don't you send it to me and I'll test it for a couple YEARS! :->

I appreciate all the comments and encouragement.
I did take this one pretty thin, but not as thin and the Santoku style I did earlier. I have a few variations on this one to try out and will post some more pics as I complete them. The hollow ground hybrid one is probably the most interesting.

I say "I think" this is African blackwood as it came from a wood sculpture I picked up at another garage sale. It is marked Kenya on the bottom. I actually got 3 of these tall skinny statues for my knife making. Nothing like re-purposing artwork. :)
