H1 steel

These are going on my Christmas list. To give and to receive- a wonderful way to live :D.
 
To anyone who had one (K05) previously, how stiff was the blade? Did it flex like a filet knife or was it a bit more rigid?

Hey Gringo,

The most desired knives for gutting among professional fisherman in the pacific northwest was the serrated K05 with the red handle. Cut like a witch, stayed sharp a long time. Easy to find. When they started to dull, they'd throw them away and get a new one. They used them by the hundreds. They really felt bad when we stopped making them about 10 years ago.

Just got back from the meeting the maker and we'll be remaking them. Hope to have them by October this year.

The teeth on those things must make them super aggressive cutters for prep work. I could not imagine throwing them away tho! To me, that's like throwing the Pyrex container out with the old rice because it was a little dirty!

These guys are working their butts off, make top dollar and since the knife is inexpensive and stays sharp for such a long time, it's easier for them than sharpening.

I've read, in a commercial setting (processing plant) the life expectancy of a PE knife is 2 - 3 weeks. Imagine the number of times, even with the electric sharpener, that the knife will be sharpened before it wears out. Then figure out the amount of time spent sharpening that knife. And the overhead for the sharpener.

I need to get into the fishing industry! (or get a raise :( )

I'll definitely be buying one of these to play around with in the kitchen. The serrated kitchen knives I have now I don't really care for as I find them to tear certain foods. I can't want till these are in stock!
