In other words, how sharp is sharp enough?

Rule #1: A knife is never. ever. ever. sharp enough. There's always another level to strive for.

Mainly, just for fun. If you're slicing newspaper or better yet, phone book pages (or campmor catalog pages), then you're good enough. Until you wake up at night and remember rule #1.

Red/green duofold works well for me 99% of the time. I can get hair popping edges with that combo. The extra coarse and coarse DMTs are useful for re-profiling an edge.

I can't follow all of LeRoy Jethro Gibbs' rules though.

If it cuts free/standing typing paper ~~ it is sharp enough to slice my To-Mator and anything else I come across that
needs cutt-un.!****
