These are made from very thin stock which makes it very easy to glide through material without much resistance. Its is rare to find good quality carbon steel paring knives with handles that will last. Especially ones that are as interesting as these. Carbon steel will give you the ability to maintain the edge very easy. I have had nothing but great feed back on these. I even did a 1/8" brass rod chop test and had no edge damage with one of these.
The best part is they are only 185$
A very reasonable handcrafted production price.
This is the 3rd batch of these paring knives I have done in 2 years. This time I went for a bright finish on the blades instead of the black acid wash. I do believe this batch has the best handle line up yet.
