i was just curious to see what anyone thinks is the easyiest handle material to work with.

Stag for hidden tangs. Very little shaping and sanding, colors easily, is durable and looks like a knife should look.
 
Let's see...I've worked with canvas and linen Micartas, various woods, and carbon fiber, and I would have to say CF was the easiest to file, shape, cut, etc. But, since it has that nasty dust, for the rest it scores really low. Wood is nice because it looks better and better the more you finish it, and it is so easy to file. Micarta is tough to work with, although a little bit of patience makes 'em all pretty easy to use, in my opinion...

Stag is easy, but I prefer wood for most knifes. I've always loved natural materials so I stick to them most of the time - micarta is a great, but not easy to work.
 
as long as all oter considerations are out of the window, for pure ease, on creating something to hold onto when using a blade, cloth atletic tape is very simple and easy on the hands, of course it looks like hell, and is very cheap, butthen you asked for ease not beauty.

paper micarta, alls you gotta do is sand it to 2500 grit. wood is easy too, but since a finish is required i'd have to say it's harder to deal with. just go with whatever you think looks best.
