If you watch closely going frame by frame, you can see the handle bend in Anthony Hopkins' fingers. It' a rubber prop of a serrated Harpy with a flat edge. Someone posted screen captures in the Spyderco Sightings thread on the factory forum several years ago.
 
I've recently decided to finally watch the series (I watched only the movie here) and noticed Spyderco there. It s interesting they decided to keep this detail and show it in the series either.

I read the book too, before Hannibal the movie was released. IIRC, in the book, he bought both a Harpy and a Civilian at a gun show.

My recall is not that detailed: I just remembered the Spyderco detail. I may have to reread that book.
