Happy 4th of July, what's on the BBQ this weekend?

Gawd dang you Americans know how to celebrate your independence! When Straya day comes around here in 'queenie' land we drink, swim, drink, fight, drink, drink then drink some more then head down to the nearest Greek place for a sh!tty Kebab.. just so we've got something to throw up.. but we do this most weekends. Nothin' special..
 
yeah - we also don't have milk chugging competitions.

dinner last night - I sliced up some of the smoked pork, tossed it in a tortilla with fresh made salsa, steamed spinach, and a bunch of shredded cheese, rolled it up and melted it all together in the microwave.
 
Wife had to work a 14 hour shift in the hospital taking care of our soldiers and vets today, so we didn't do a whole lot for the 4th. Ended up grilling NY strips with truffle salt, a few types of pepper, thyme, sage, and garlic, topped with sauteed mushrooms, and with Benton's bacon/smoked gouda risotto and heirloom tomatoes on the side.
 
The finished brisket. Turned out well based on the gobbling at the table. Photo didn't turn out well, I blame IPA-vision.
