Happy Hanukkah!

Being someone who traveled a LOT in my 20s & 30s I learned a lot from many different cultures. Hanukkah is my second favorite Jewish celebration (Seder is my favorite) Thanks for a very simple recipe for Latkes. The one I have is a bit more complex but not much AND I bet it tastes about the same...YUMMY. I prefer the applesauce, but sour cream is pretty good too. I had one friend's family serve them to us with sour cream mixed with a touch of capers minced in. That was good too. In fact I haven't found a way I don't like them :D

I'll edit my original recipe to reflect the squishing bit, as well as Esav's sour cream recommendation. You can definitely add a little pepper to the mix as well, won't hurt hardly anyone.

Magic egg/potato ratio is about 1 egg per 2 or 3 potatoes. It shouldn't be runny or anything, it's not an omelette, just think of the egg as the glue that holds it together :)

Definitely post pics, I'd love to see how they came out!

We are having some family over tomorrow night. I'll be slow roasting a brisket and also trying out Shav's sour cream and capers suggestion to go with the latkes!
 
Hope you and your family likes them that way. Not sure why but the capers just added a bit of sour/salt flavor that really works with the richness of the cream and the nice crispy edges of the potato shreds. And a brisket now that is how to host a family dinner.
 
Just called home. So mom says she puts portions of the grated potatoes into a cloth and twists it until they are dry. Not as dry as for potato dumpling prep but close.
This way everything sticks better to itself. She also uses less oil but also cooks on less heat for longer which gives them more time for the moisture to escape before it turns nice crisp.
I'm sure the more people one asks the more tweaks will surface.
Will try soon if hers makes any difference.

Philllll, how'd the capers go? I'm too broke to buy capers these days, but I'll get em one way or another if you say they're good with latkes!

Shavru, brisket is my favorite. Anyone who cooks a good brisket and is willing to share is a godsend in my book!

Agreed Steely, The tummy started making gurgling noises when I scrolled past and it really started to whine at the mention of brisket again. Someday I will find the generous person SG is referring to. But so far my attempts at brisket have not been very successful. Some of you may remember that hubby is the cook, I do the dishes and eat. But occasionally I like to prove I wouldn't have starved to death all those years ago if I hadn't met him. Well lets just say that with a brisket, and my talents in the kitchen I have proven that it would have been a lot closer than I would want to believe :D
 
I managed to get a pic of my brisket after it came out of the oven. I will post it up later. It turned out amazing and I used the leftover braising liquid to make a beef barley soup last night.

All the thoughts of food and I couldn't handle it. My neighbor is an older Filipino lady who has trouble getting around. I help her out occasionally when she needs to go places or grab her shopping when I am doing mine, you know just little neighborly things like everyone used to do for their neighbors when I grew up. Still every year her daughter and son-in-law stop by and present me with a huge platter of home made lumpia and a monster container filled with a main course type dish that differs each year, to pay me back for helping her out. I do my best to tell them it isn't necessary, but I think the fact I start drooling like one of Pavlov's dogs when I hear their car in the driveway keeps em coming back year after year. Anyways, Monday was this year's delivery... About 4 dozen lumpia and a mound of Halang Halang which she makes nice and spicy, sort of a coconut curry chicken is about the closest I can describe it but much more depth of flavor with a nice spicy heat. So I had to go re-heat some while I decide how to wheedle hubby into cooking Latkes soon.
