Hard use kitchen knife failure has me scared of VG10.

As for kitchen knives and wives... I cannot tell you the fights that have occurred in our kitchen over the carbon steel knives that I use. At this point she won't even look at them let alone use them. What's so hard to understand about NOT LETTING THEM SOAK IN WATER?

I have a plan! I'll get the edge back on the Shuns and keep them in a special place or fashion up a lockable knife block.:)

Magnetic wall racks work very well. Or keep the knives in a draw but make corrugated cardboard sheathes for them.

Now on to my big decision....Sage 1, vs Paramilitary, Vs Caly, vs pacific salt vs tenacious.....hmmm....

I'd advise choosing the blade geometry and size of knife you need and ignoring steel, except for a knife to use around water, in which case it is the Salt. The low end knives are usually much, much better value than the high end - I'd only go up range if I needed eg the Manix's better lock. Spyderco serrations are great for tough cutting, but either go all plain or all serrated - the combination edges are irritating.

The san mai Shuns are really susceptible to chips in my experience, especially if your wife is used to heavy bladed choppers.
 
I'm in and out of salt water one weekend per month with knife in pocket. I know about the H1, how would the s30v and vg10 do?

They should be ok if you wash and dry them reasonably soon after use. Do a google search "so30v rust" etc. But H1 will be significantly better; I've never heard anything praise for its exceptional resistance.
 
I've seen the H1 bleach tests, amazing. The S30v or VG would be ok if I wiped and oiled after use.... Right? Not sure if I can commit to that EVERY time I dip in NaCl H2O.

They should be fine, but you might get a bit of surface rust (even small specks). I'm around water a lot, in a hot and humid weather. VG-10 and S30V Spydies usually show some rust spots after a day or two (a quick wipe with a bit of polishing paste takes care of it), but it can be a bit irritating if it happens in some hard to reach internal part. So I bought a couple of H-1 folders for those occassions and I'm loving them (my Pacific got quite a work out these past few days, we had massive floods with more than 50 dead and I volunteer with a SAR squad).

I'd go with a Pacific or Salt 1 for water use (depending on the blade length you want), and a Paramilitary 2 for everything else.
