There must be a difference in the way manufacturers harden thier blades. I have noticed when I reprofile the edges, (not in the touchups with the Sharpmaker) I have had more dificulty with some than others. Take Spyderco, Benchmade, CRK: The Spydercos usually take longer (harder?) to reach my standard angle 18 deg on the Edge Pro. The Sebenza the least dificult.
Some of the knives: Paramilitary, Manix, UKPK, Ritter Grip, Sebenza.
Does Spyderco harden S30V harder than others?
 
Are you seeing a geometrical influence as the Sebenza has a deep hollow grind and Spyderco's are usually more acute initially.
