Hardness for 1095 bushcraft/hunting knife?

I am going to be sending a 3/16in thick knife in 1095 steel for heat treat soon. I intend for the knife to be a bushcraft/hunting knife. What hardness should I request it be treated to?

If you are going to be beating on it you might drop that a bit, HRc - 55. If you are doing food prep and feather sticks you might up it a bit, HRc - 60.
