Hardness for a camper out of latrobe 14-4CrMo

I have a question. I will make a knife, that definately will be used for choping, batoning, and other bushcraft activity out of 14-4CrMo. After HT - 1055C for 20 min soak, oil quench and 180C for 2 hours temper it actualy gave hardness arround 57HRC - it can scratch glass with the unbeleved edge. Is that a good hardness for such knife?
 
Also, how much from the surface must be removed before measure the hardness on a rockwell tester. The man that made the measure told me, that I had to grind off more from the surface after HT and polish it before the measure, but I gave it to him with light satin finish. What is your opinion?
