Stainless steel handles are still heavy when they are dry .
They are what you would expect from smooth steel with no jimping. I don't care for them in general myself. If you find it too slick, there are any number of fixes, from grip tape to adding texture with a grinder.
Stainless steel handles are not grippy, they're smooth, but i've never dropped a ss handled knife, but IMO, i find that the belt clip adds a lil more grip when opening and closing because i keep my fingers on the pocket clip.
Smooth or satin finished handled SS knives tend to be nice and smooth coming in and out of the pocket. It's give and take as far as how much grip you want by going with a different material
I've never had mine slip primarily since it's not a stabbing knife, being a draw cut or slashing knife it sits in your hand very nicely and the grip is secure. The clip and slot do add to the grip while opening in as well.
Honestly, I think they are grippy enough by nature of the handle shape, but you have to be a little more mindful because SS handled knives are heavier and a little slippery. If this is a real concern you should take a good hard look at the Salt alternative to the Harpy, the Tasman Salt.
