This is a 270mm Hattori FH suji. This series of knives was designed by the forum members of the "In The Kitchen" subforum of Knife Forums, which was apparently THE place for kitchen knife nerds before "conflict" kind of split out the group. It was made by Hattori who have made a bunch of knives for other companies over the last couple of decades in addition to their own work. The blade is VG10 and Hattori have the reputation for really nailing the heat treatment of this steel. Not chippy and easier to sharpen than some other VG10 knives. I bought its while back from Japanese Chef Knives in Japan to use as a blade pattern. The handle is linen Micarta and the bolsters are stainless. It is a very nice slicer and really has't been used much. There are one or two small scuff from tuning up the edge on the "weak" side of the blade. It comes with the fabric lined wood box. Today, MSRP on this knife is well over $300, but JCK has listed their "holiday sale" price of this knife at $235 plus shipping form Japan so like $250. (Japanese Post Office is cheap!!!!) What type of grind on the edge, is it symmetric or chisel ground? I'm looking for a blade VG-10 or some other steel with vanadium carbides to test on our ERU sharpener. I have not had any of the super steels, I'm a carbon guy but want to try them out on this sharpener. What are some of the harder steels to sharpen that you are familiar with?

It is western 50/50 grind , Fred. Supposedly some other people's VG-10 recipe is harder to play with form what I have read. Shun is one name that I have heard. the kitchen knife guys say that the HT on these Hattori blades is just different somehow in a good way.
