Reminds me of the fellow who went into a real estate office, showed them an antique doorknob and said, "My wife wants a house to match this doorknob."
I think just about any custom maker would be willing to use your wood (I assume it's some kind of wood you have, but the same should apply to just about any kind of handle material). I suggest you need to start by thinking about what kind of knife you want ... pick a maker who does that kind of knife ... try to find one who doesn't have a five-year waiting list....
I bet a lot of people have a piece of special wood they've been saving ... I have some birdseye maple I've been keeping to make knife handles out of one of these days.
