The thing that keeps not getting discussed and that I think is important here is blade grind.

IME, flat or convex is best for wood and hollow grind is best for game cleaning.

This said, I'd rather process meat with a flat ground blade than process wood with a hollow grind blade. That is, IME, a flat (or convex) blade is much more versatile and much more able to span the uses the OP is asking for.

I recommend the 53 pattern by Great Eastern Cutlery. Very stout and capable of all but the self defense rolls you describe. It comes in many blade and spring combos found here....http://greateasterncutlery.net/blog/patterns/patterns-31-56/53-equal-end-cigar-cuban/

I have owned the Stockman and T.K Cuban models. The Moose would be just as stout I am sure. I like the T.K. for its slimness and ease of carry for such a large knife. It is 4 1/8" long for a full size grip and the single spring gives the main blade some thick stock to start. The grind is impressive and thin behind the edge. The pen blade is very thin and very handy for a lot of tasks. I ground mine into a more sheepfoot style for my uses. I wouldn't hesitate to be stranded with that knife, highly recommended! :thumbup:
