You're right that calipers are cheap, but you still have to buy the knife to measure the edge thickness. If it turns out to be thicker and less efficient than you want, you're pretty much out of luck unless you regrind the whole blade. Every sharpening just makes the edge thicker.

And because edge thickness (first) and edge angle (second) are the key factors in high-performance knife cutting, makers should include those specs before you buy the knife.

You wouldn't buy a flashlight without knowing the lumen output, just because you could measure it after the purchase.

I was talking about makers telling us the edge thickness , not consumers trying to find out after the fact. ;)
 
The problem with all this is it costs money and a vast majority of customers are like me and don't care.

I care about two things..will it do what I want it to..does it have a warranty beyond that it's nap time
