Heat Treat Question

In stock removal, after bevels have been established, but before final finishing and sharpening. Blades that are to be engraved must be done before the heat treat.

In forging, after the final forging, after bevels have been established, but also before final finishing and sharpening.

Since you did not specify, most production knives are ground after heat treat, fyi, and are usually done on automated equipment.
 
Here's what I do (stock removal):
1. cut profile from barstock
2. rough grind bevels
3. heat treat
4. final grind
5. hand sand off the grind marks
6. put on guard and handle
7. final hand sand and clean up the blade
