Hey guys, so I am finishing up my first batch of stainless knives out of AEB-L, they look great and i think they will turn out great too. I was wondering though, how thin should i take them? Can i take them all the way to final thickness and final finish with grits? or should i leave some space and only take it down to 200ish? Im using buck/ paul bos by the way. Thanks guys!

200? Do you mean .020 because we would love to get some AEB-L at .200? ;) As thin as a lot of AEB-L stock is, an argument could be made to profile, drill and debar and have it HT'ed at full thickness and then grind it hard.

200 grit. And im a little past that step, as i have my blades done.
I know most makers heat treat their blanks before grinding but opted not to, and now im wondering how thin i should take my knives down before heat treating them.

For me, it depends on the stock thickness, only because I do the HT in house.
Anything .093 or over, I pretty much finish the bevels. Under that, I do most or all of the bevels after HT to avoid cupping.
Bos may not have these issues at all, though.
